Liubiju dates to the ninth year of the Jiajing reign in the Ming dynasty (1530). It is described as China’s oldest surviving pickle shop, with nearly 500 years of history. Its pickle-making craft is listed in China’s national intangible cultural heritage inventory. Liubiju follows six traditional requirements: the grains must be properly selected; the fermentation starters prepared at the right time; the preparation and heating kept clean; the water fresh and fragrant; the earthenware sound; and the heat precisely controlled.
The gift box brings together three classic pickles: babao vegetables (a combination of 8 vegetables), pickled ganlu (snail-shaped, crisp and tender), and sweet-sauce cucumbers (rich in sauce aroma, with balanced salty and sweet flavors). Serve them with congee, noodles, or a drink for a taste of a centuries-old pickling tradition.
