How to enjoy it

How to enjoy Xi’an's street-food highlights.

🥣 How to Eat Paomo

  1. Break the bread first:Break unleavened bread into even crumbs between mung-bean and soybean size, not chunks or torn sheets. Smaller pieces absorb more flavor; longtime Xi’an diners may spend forty minutes on this step.
  2. Choose the cooking style:Give the crumbs to the cook and choose ganpao, koutang or shuiweicheng. Ganpao has the least broth and strongest flavor; shuiweicheng has generous broth and soft bread. Koutang is recommended for beginners.
  3. Include the accompaniments:Start with sweet pickled garlic to refresh your palate and chili paste for flavor. Do not stir: eat spoonful by spoonful around the bowl’s edge to keep the bread springy and the soup warm.

🥙 The Fine Points of Roujiamo

  1. Use fresh-baked bread:Baiji flatbread should be freshly baked, with its characteristic raised back, dark ring and chrysanthemum-like center. The outside is golden and crisp, the inside layered. It should still be hot and crackle at the first bite.
  2. Balance lean and fat:All-lean pork can be dry and all-fat too rich, so mixed lean and fat is preferred. The meat braises for at least six hours in master stock; a ladle added while chopping is essential.
  3. Eat while hot:Hot meat in hot bread is the key. Let the juices soak in and, ideally, finish in three bites. Once cold, the bread hardens and fat sets, diminishing the flavor.

🍝 Understanding Liangpi

  1. Know the styles:The three schools are Qinzhen rice sheets, soft and rice-fragrant; Qishan rolled sheets, chewy and hot-sour; and Hanzhong hot sheets, soft and served warm. Get to know them before choosing your starting point.
  2. Chili oil is the soul:Most of a good bowl’s appeal comes from its chili oil. Roasted Qin chilies are ground and covered with hot oil for fragrance as much as heat. The source praises good chili oil as aromatic without an unpleasant burning finish.
  3. Pair with Bingfeng soda:Liangpi plus Bingfeng is a Xi’an summer formula. The orange bubbles of glass-bottled Bingfeng soda meet the noodles’ sour heat for a refreshing taste of this carb-loving city.
