How to enjoy it

How to enjoy Suzhou's street-food highlights.

🍜 Three Fine Points of Suzhou Noodle Soup

  1. Choose first-pot noodles:Shops begin making soup at 5 a.m.; the first pot at the 6 a.m. opening is clearest and freshest. Later simmering clouds the broth.
  2. Cook noodles just enough:Lift noodles when just cooked, with a trace of firmness at the center. The source describes transferring them to a fresh bowl before adding broth to preserve their smooth texture.
  3. Serve toppings separately:Toppings arrive on separate small dishes, a style called guoqiao. Taste clear broth, then a topping, then noodles; experienced diners often choose two or more toppings.

🥟 How to Eat Suzhou Pan-Fried Buns

  1. Blow first:Fresh buns hold scalding broth. Blow gently at the place you will bite to cool it before opening.
  2. Take a small side bite:Make a small opening at the side, just enough for broth to flow. The small buns have thin skins and can break apart with a large bite.
  3. Sip, then eat the meat:Sip the slightly sweet, meaty broth, then eat the filling and base. The bottom should finish with a crisp crunch.

🍵 Suzhou’s Seasonal Foods

  1. Spring: qingtuan:Around Qingming, qingtuan from Zhengyi Town in Kunshan appears: green mugwort rice wrappers around bean paste, a taste of spring available at Huang Tian Yuan on Guanqian Street.
  2. Autumn: gorgon seeds:From late August to October, freshly shelled gorgon seeds on Fengmen Cross Street are an autumn favorite, simply simmered with rock sugar and finished with dried osmanthus.
  3. Winter: Cangshu lamb:In winter, Cangshu Town’s lamb shops steam with clear-broth lamb, red-braised lamb and lamb noodles. Shantang Street and Fenghuang Street also have good lamb restaurants.
