How to enjoy it

How to enjoy Haikou's street-food highlights.

🐔 Wenchang Chicken Dipping Sauces

  1. Sand ginger is essential:Mix equal parts crushed sand ginger and minced fresh ginger with salt, then pour over hot oil. Sand ginger’s distinctive aroma cannot be replaced by ordinary ginger.
  2. Add calamansi:Squeeze in the juice of 2-3 Hainan calamansi. More tart and fragrant than lemon, it brightens the chicken.
  3. Taste plain before dipping:Eat the first piece plain to appreciate its coconut note and sweet meat. Dip the second for a progression of sour, salty, fragrant and sweet.

🍧 How to Order Qingbuliang

  1. Choose a coconut-milk base:Authentic qingbuliang uses milk pressed from fresh mature coconut, rather than coconut water or plain syrup. Look for a milk-like thickness and coconut-oil aroma.
  2. Choose the iced version:Warm versions exist in winter, but ice is central to this style: crushed ice beneath the coconut milk gives the preferred texture as they mingle.
  3. Add macaroni:Macaroni and donggua-yi winter-melon topping are characteristic additions. Springy macaroni in coconut milk provides a distinctive contrast with the sweet liquid.

🍜 Hainan Noodles or Baoluo Noodles: How to Tell Them Apart

  1. Compare the thickness:Hainan noodles are hair-fine, white and soft; Baoluo noodles are chopstick-thick, round and translucent. Their thickness makes the difference clear.
  2. Compare the serving styles:Hainan noodles are half-tossed and half-soup: sesame paste, pickled bamboo shoots and peanuts receive a ladle of hot bone broth. Baoluo noodles come as soup or dry-tossed with thick braising sauce.
  3. Consider the time of day:Hainan noodles are a breakfast staple, busiest around seven or eight. Baoluo noodles are eaten all day, with a soup bowl especially comforting in rainy weather.
