Dandan noodles are named after the shoulder poles vendors used to carry their stoves and ingredients while selling noodles along the streets. They are one of Chengdu’s most representative street noodle dishes. Traditional dandan noodles are tossed rather than served in soup: the saying is “oil at the bottom of the bowl, not broth.” Thin noodles are topped with minced pork, Yibin preserved mustard greens, and crushed peanuts, then dressed with chili oil and sesame paste. Spicy, tingling, savory, and fragrant, a bowl feels thoroughly invigorating.
The kit contains 4 servings of handmade thin noodles, a house-recipe meat sauce pack (minced pork, Yibin preserved mustard greens, and sesame paste), a chili oil pack, and crushed peanuts. Preparation: boil the noodles for 3 minutes → drain into a bowl → mix in all the sauce packs → sprinkle with peanuts. Recreate the taste of a Chengdu lane in 3 minutes.
